Ingredients

18 lasagna noodles , cooked and drained
2 cups marinara sauce
1 teaspoon vegetable oil
2 portobello mushrooms , diced
1 cup frozen chopped spinach
2 cups diced cooked chicken
1 container ricotta cheese
1/2 cup grated Parmesan cheese
1 teaspoon dried oregano
salt and ground black pepper to taste
2 cups Alfredo sauce
1 cup shredded mozzarella cheese
1/4 cup pine nuts
Grilled Chicken and Portobello Lasagna Rollups are a creative way to switch up traditional lasagna. Instructions

1.Preheat oven to 375°F (190°C).
2.Spread 1 cup marinara sauce evenly over the bottom of a 13x9 inch baking dish.
3.In a large skillet, heat vegetable oil over medium-high heat. Add diced portobello mushrooms and cook for 5 minutes or until tender.
4.Add frozen chopped spinach and cook for an additional 3 minutes. Remove from heat and set aside.
5.In a separate bowl, mix together cooked chicken, ricotta cheese, grated Parmesan cheese, dried oregano, salt, and ground black pepper.
6.Lay out cooked lasagna noodles on a clean surface. Spread the chicken and cheese mixture evenly over each noodle, leaving a 1/4 inch border at the end of each noodle.
7.Add a spoonful of the mushroom and spinach mixture over the chicken and cheese mixture.
8.Roll up each noodle and place them seam side-down into the prepared baking dish.
9.Pour Alfredo sauce over the rollups. Top with shredded mozzarella cheese and pine nuts.
10.Bake for 25-30 minutes or until the cheese is melted and bubbly.
