1 tablespoon plain flour ( all-purpose )
1/2 cup milk
1/4 cup dark ale , such as stout
2 teaspoons Worcestershire sauce
1 teaspoon hot English mustard
1/2 cup cheddar cheese , grated
2 egg yolks
sea salt and cracked black pepper
4 slices thick bread

Instructions

1.In a large skillet over medium heat, melt 30g of butter.

4.Whisk in the plain flour and cook for 2 minutes until smooth and bubbling.
5.Gradually whisk in the milk and dark ale, stirring constantly until the sauce is smooth and thickened.
6.Stir in the Worcestershire sauce, mustard, cheddar cheese, and egg yolks, whisking until the cheese is melted and the mixture is smooth.
7.Return the leeks to the skillet and stir through the cheese sauce.
8.Toast the slices of bread until golden and crispy on both sides.
9.Spoon the leek and cheese mixture onto the toast and season with sea salt and cracked black pepper to taste.
