Ingredients

6 tablespoons salt
6 tablespoons sugar

1 whole chickens
10 pitted Spanish olives
3 tablespoons olive oil
1 garlic clove
1 teaspoon capers

Instructions

1.In a small bowl, combine salt, sugar, and pepper.
2.Butterfly the chicken and rub half the mixture of salt, sugar, and pepper over the chicken on both sides.
3.In a food processor, combine olives, olive oil, garlic, capers, and the remaining mixture of salt, sugar, and pepper. Process until smooth.
4.Rub the olive mixture onto the chicken and let marinate for at least 30 minutes.
5.Preheat a grill or grill pan over medium-heat.
6.Grill the chicken for 5-7 minutes on each side, or until fully cooked through.
7.Remove from the grill and let rest for 5 minutes before serving.
