Ingredients

1 lb skirt steak
4 dried porcini mushrooms
1/2 dried chili , seeded
1/2 teaspoon smoked sea salt
2 ears corn
2 tablespoons vegetable oil , plus more for greasing the grill pan
6 ounces frozen mushrooms ( mixed ) or 6 ounces fresh mushrooms , room temperature
kosher salt
fresh ground black pepper
8 taco shells
1/2 bunch cilantro or 1/4 head cabbage , for serving

Instructions

1.Preheat the grill to high, or heat a grill pan over medium-high heat on the stove.
2.Clean the dried porcini mushrooms by wiping them with a damp cloth or paper towel.
3.In a spice grinder or food processor, grind the dried chili and smoked sea salt together until it becomes a fine powder.
4.Rub the skirt steak with the chili and salt mixture, then place it on the grill or grill pan.
5.Grill the steak for 4-5 minutes on each side, or until it reaches your desired level of doneness.
6.Cut the corn kernels from the ears and sauté them in a skillet with 2 tablespoons of vegetable oil until lightly charred.
7.Heat the frozen or fresh mushrooms in the microwave or on the stove until warmed through.
8.Season the mushrooms with kosher salt and black pepper to taste.
9.Warm the taco shells on the grill or in the oven according to package instructions.
10.Slice the skirt steak thinly against the grain.
11.Place a few pieces of steak in each taco shell, then add some corn and mushrooms.
12.Top the tacos with fresh cilantro or shredded cabbage, as desired.
