Ingredients

3 boneless skinless chicken breasts
olive oil

1/2 cup ketchup
2 tablespoons honey mustard
4 tablespoons water

2 tablespoons cider vinegar

3 cups shredded cabbage
1 carrot , shredded
1/3 cup sliced green onion

Instructions

4.Spread half a tortilla with 1 tablespoon mayonnaise and top with 1/4 cup cheese and some sliced chicken. Top with another 1/4 cup cheese and fold the tortilla in half.
5.Repeat with remaining ingredients.
6.In a small bowl, whisk together cider vinegar and sugar. Add shredded cabbage, carrot, and sliced green onions and toss to combine.
7.Serve the quesadillas hot with homemade coleslaw on the side.
