Ingredients

1/2 cup olive oil
1/4 cup fresh lemon juice
1 tablespoon chopped fresh thyme
salt
fresh ground black pepper
4 bass fillets or 4 other firm white fish
16 thin fresh lemon slices
8 sprigs fresh thyme
8 large banana leaves , soaked in water to make them easier to work with
12 toothpicks ( soak them in water )
1 tablespoon olive oil
4 cups assorted fresh vegetables ( Cabbage , Onion )

Instructions

1.Preheat the grill to medium-high heat.
2.In a small bowl, whisk together 1/2 cup of olive oil, 1/4 cup of fresh lemon juice, and 1 tablespoon of chopped fresh thyme. Season with salt and fresh ground black pepper to taste.
3.Brush the bass fillets or other firm white fish with the olive oil mixture. Place 4 fresh lemon slices and 2 sprigs of fresh thyme on each fillet. Place the fish on top of 1 large banana leaf and then cover with another large banana leaf.
4.Secure the banana leaves in place with toothpicks that have been soaked in water. Repeat with the remaining fillets.
5.Brush the remaining tablespoon of olive oil over the sauteed vegetables (cabbage and onion).
6.Place the fish and the vegetables on the preheated grill. Cook the fish for 10-15 minutes or until cooked through. Cook the vegetables for 5-7 minutes or until slightly charred.
7.Once cooked, remove the fish from the grill and carefully remove the banana leaves. Serve the fish and vegetables hot and enjoy!
