Ingredients

1 medium head garlic , unpeeled
5 tablespoons extra virgin olive oil , divided
salt and pepper to taste
2 tablespoons minced shallot
1 1/2 teaspoons balsamic vinegar
1/2 teaspoon red wine vinegar
1 1/2 pounds thick stemmed asparagus
4 slices sourdough bread

Instructions

1.Preheat the oven to 375°F.
2.Cut the top off of the garlic head and place on a square of aluminum foil. Drizzle with 1 tablespoon olive oil and sprinkle with salt and pepper. Wrap the foil around the garlic tightly and roast for 45 minutes.
3.While the garlic is roasting, make the vinaigrette by combining 2 tablespoons olive oil, minced shallot, balsamic vinegar, red wine vinegar, salt, and pepper in a small bowl.
4.Preheat a grill or grill pan over medium-high heat. Snap or cut off the woody ends of the asparagus and toss with 2 tablespoons olive oil, salt, and pepper.
5.Grill the asparagus for 3-4 minutes per side, until charred and tender.
6.Toast the sourdough bread and rub with the roasted garlic. Drizzle with remaining olive oil and sprinkle with salt and pepper.
7.Serve the grilled asparagus with the garlic toast and drizzle with the balsamic vinaigrette.
