7 corn cakes , thawed if frozen ( arepas )
3 tablespoons melted butter , divided

Instructions

1.In a large bowl, mix together the diced sweet onion, green and red bell peppers, minced garlic, chopped fresh cilantro, distilled white vinegar, fresh lime juice and salt.
2.Set aside the salsa and preheat a grill or grill pan to medium-high heat.
3.Brush each side of the thawed corn cakes with melted butter.
4.Grill the corn cakes for approximately 5 minutes on each side, or until crisp with defined grill marks.
5.Serve the grilled arepas topped with the salsa.
