Ingredients

4 cups beef stock
2 ounces dried mushrooms
1/2 lb fresh mushrooms , finely chopped ( optional )
2 onions , quartered
1 onion , chopped
1 large carrot , sliced
8 black peppercorns
2 bay leaves
4 ounces barley
1 tablespoon flour
2 small potatoes
2 ounces butter
Gribnoi Sup is a traditional Russian soup made with a mix of dried and fresh mushrooms. The hearty and earthy flavors make it a comfort food favorite during the colder months. The addition of barley adds a nutty flavor and makes it very filling. It is often enjoyed as a main course served with a side of bread or small pastries.

Instructions

1.Soak dried mushrooms in hot water for 30 minutes.
2.In a pot, add beef stock, quartered onions, sliced carrot, peppercorns, and bay leaves. Bring to a boil and let it simmer for 30 minutes.
3.Strain the stock and discard the solids.
4.Add the barley to the strained stock and let it cook for 20 minutes over low heat.
5.In a separate pan, melt butter and sauté chopped onion and fresh mushrooms until soft.
6.Drain the soaked dried mushrooms and add them to the pan. Mix in flour and let it cook for a minute.
7.Add the mushroom mixture to the pot with the barley and stock. Let it simmer for 10 more minutes.
8.Serve hot and enjoy!

PROS

This soup is rich in umami flavor and very filling due to the addition of barley.
It is also a good source of dietary fiber.

CONS

It can be time-consuming to make, especially with the extra step of soaking the dried mushrooms.
Some people may not enjoy the texture of barley in their soup.
