1 1/2 cups butter , melted
16 ounces phyllo dough , thawed
1 cup sugar
1 cup water
1 tablespoon lemon juice
1 cup honey ( net weight 12 oz . )
1/2 teaspoon vanilla

Gretchen's Baklava is a variation of the traditional recipe that uses walnuts, sugar, cinnamon, phyllo dough, and a honey syrup to create a sweet and nutty pastry with a satisfying crunch. Instructions

1.Preheat oven to 325°F (162°C).
2.In a medium bowl, mix together walnuts, 1/2 cup sugar, and cinnamon.
3.Brush a 9x13-inch baking dish with melted butter.
4.Layer 10 sheets of phyllo dough into the baking dish, brushing each sheet with melted butter as you go.
5.Spread half of the nut mixture over the phyllo dough.
6.Layer 5 more sheets of phyllo dough, again brushing each sheet with melted butter.
7.Spread the remaining nut mixture over the phyllo dough.
8.Layer the remaining phyllo dough on top, buttering each sheet as before.
9.Using a sharp knife, make diagonal cuts on the top layers of the phyllo dough, creating diamond-shaped pieces.
10.Bake for 50-60 minutes, until the baklava is golden brown and crispy.
11.While baklava is baking, prepare the syrup by bringing 1 cup sugar, 1 cup water, and lemon juice to a boil in a medium saucepan over high heat, stirring to dissolve sugar.
12.Reduce heat to low and add honey and vanilla, stirring to combine.
13.Allow syrup to simmer for 15-20 minutes, until slightly thickened.
14.Remove baklava from the oven and immediately pour syrup over the hot pastry.
