Ingredients

3 cups cooked rice ( I use long grain boiled in chicken stock )
2 cups fresh spinach , chopped fine
1/2 cup frozen peas
1/4 cup chopped green onion
1/4 cup carrot ( chopped fine )
2 garlic cloves , minced
1/8 cup soy sauce
1 tablespoon sesame oil
salt and pepper
Greens (Fried) Rice is a delicious and healthy twist on classic fried rice. Instructions

1.Add sesame oil and minced garlic to a preheated pan and fry for 1 minute over medium heat.
2.Add chopped green onion and fry for another 30 seconds.
3.Add carrot and frozen peas. Fry for 1 minute
4.Add chopped fresh spinach and fry for 1 minute.
5.Add in cooked rice and stir-fry all ingredients for another 2-3 minutes.
6.Add in soy sauce, salt, and pepper according to your taste.
7.Take everything off the heat, and the Greens Fried Rice is ready to serve.
