Ingredients

30 medium green tomatoes , chopped ( about 6 pounds )
15 medium onions , chopped ( about 3 pounds )
2/3 cup coarse salt
3 cups white vinegar
2 1/2 cups granulated sugar
6 tablespoons mixed pickling spices , tied in cheesecloth

Instructions

1.Place chopped tomatoes, onions, and salt in a large bowl.

7.Remove from heat and discard the spice bag.
8.Puree the mixture in a blender until smooth.
9.Return the mixture to the pot and bring to a boil for 5 minutes.
10.Pour hot ketchup into sterilized jars and refrigerate until ready to use.
