Ingredients

1 carton extra firm tofu or ( 14 -16 ounce ) carton firm tofu , drained
2 2 teaspoons red chili powder or 2 teaspoons hot paprika
2 tablespoons mushroom soy sauce or 2 tablespoons reduced sodium soy sauce
1/2 cup red wine vinegar
6 medium garlic cloves
1 teaspoon fresh oregano ( toasted over medium heat in a small dry skillet until fragrant , 2-3 minutes ) or 1/2 teaspoon dried oregano , roasted ( toasted over medium heat in a small dry skillet until fragrant , 2-3 minutes )
1 teaspoon ground cumin
1/2 teaspoon whole coriander seed
1 poblano chiles , roasted or can diced mild green chilies , drained
2 cups loosely-packed chard leaves or 2 cups beet leaves
1 cup chopped fresh cilantro
1 cup chopped fresh parsley
1 cup plain dried breadcrumbs
1 teaspoon salt
2 large eggs , do not use if Vegan ( optional )
6 tablespoons olive oil

Instructions

1.Begin by crumbling the extra firm tofu into a bowl and then add the red chili powder or hot paprika and mushroom soy sauce or reduced sodium soy sauce then mix well
2.In a food processor, combine the red wine vinegar, garlic cloves, oregano, ground cumin, whole coriander seed, poblano chiles or canned green chilies and chard leaves or beet leaves and pulse until it forms a chunky but smooth sauce
3.Add the cilantro, parsley, breadcrumbs, and salt to the sauce mixture and pulse until evenly combined
4.Add the tofu mixture and eggs to the sauce bowl or a separate mixing bowl if not using eggs, and mix well
5.In a frying pan, heat the olive oil over medium heat and then add the tofu mixture, stirring occasionally to cook for about 15 minutes.
6.Serve hot garnished with your choice of herb leaves such as cilantro or parsley.
