7 whole tomatillos
6 medium jalapenos
1 medium onion , quartered
1 cup water

6 stalks cilantro

Instructions

1.Preheat your oven to 375°F (190°C).
2.Rinse the tomatillos and jalapenos under cold water.
3.Cut the tomatillos into halves and line them up, cut side down, on a baking sheet.
4.Add the quartered onion along with the jalapenos to the baking sheet and roast it in the oven for 15-20 minutes until they get slightly blackened and soft.
5.Once done, cool them for 5-10 minutes.
6.In a blender jar, add the roasted tomatillos, jalapenos, onion, garlic and water and blend it until it gets smooth and fine.
7.Add cilantro to the mixture and blend it again coarsely.
8.Store it in a refrigerator until you are ready to serve.
