Green Papaya Salad, also known as Som Tum, is a traditional Thai dish that is popular all over Southeast Asia. Made with shredded green papaya, tomatoes, long beans, garlic, chilies, and peanuts, this salad is bursting with bold flavors and textures. It's typically served as a side dish with grilled meats or seafood, or as a light meal on its own. The dish is often customizable to individual tastes, with variations in the level of spiciness, sweetness, and sourness. The use of green papaya, which is picked before it ripens and gives the salad its crisp texture, also makes it a refreshing and healthy option.

Instructions

1.Crush garlic and chilies with salt and peanuts in a mortar or food processor.
2.Add sugar, dried shrimp, lime juice, and fish sauce and stir to dissolve the sugar.
3.Add tomatoes and beans and gently bruise with a pestle or stir with a spoon to release juices and flavors.
4.Peel the papaya and cut it in half lengthwise. Remove seeds. Cut the flesh crosswise into thin slices. Add to the mortar and bruise or stir gently to mix everything.
5.Taste and adjust the seasoning with more lime juice, sugar, or fish sauce as needed. Serve with lettuce or sticky rice, if desired.

HEALTH & BENEFITS

Papayas are high in fiber, vitamins C and A, and potassium. Eating papaya supports digestion, immune function, and heart health. The salad also contains garlic and chilies, which have anti-inflammatory properties and can help boost the metabolism. However, be mindful of the amount of fish sauce used, as it can be high in sodium.
