Ingredients

12 whole poblano peppers
23 ounces vegetarian refried beans or 23 ounces low fat refried beans
4 scallions , diced
1 cup shredded mexican cheese ( optional ) or 1 cup soy cheese ( optional )

Instructions

4.Once the peppers have cooled, peel off the blackened skins, leaving the stems intact.

6.Top with shredded cheese, if desired.
7.Place in a baking dish and bake in the preheated oven until the cheese is melted and the peppers are heated through, about 10-15 minutes.
