3 cloves garlic , crushed
6 potatoes , peeled and thinly sliced
1 pound cabbage , thinly sliced
2 quarts water
8 ounces Portuguese chourico sausage , casing removed , sliced 1/4-inch thick
1 teaspoon smoked paprika
2 teaspoons salt

Instructions

1.Heat olive oil in a soup pot over medium heat.
2.Add onion and garlic and cook until onion is translucent, about 5 minutes.
3.Stir in potatoes and cabbage and cook for 5 more minutes.
4.Pour in 2 quarts of water and bring to a boil.
5.Add sliced chourico, smoked paprika, salt, and pepper.
6.Reduce heat to low and simmer for 30 minutes until potatoes are tender.
7.Remove from heat and let cool slightly.
8.Using a ladle, scoop out half of the soup and blend until smooth. Return blended soup to the pot and stir.
9.Heat soup over medium heat until warmed through.
10.Serve hot, drizzled with olive oil.
