1 large egg , lightly beaten
1 1/2 cups finely crushed fried onions
1/3 cup plain breadcrumbs

Instructions

1.In a saucepan, bring chicken stock and salt to a boil. Reduce heat to low and keep hot.
2.In a large saucepan, heat olive oil over medium heat till shimmering. Add mushrooms and cook until they release their juices.
3.Add the rice and cook, stirring constantly, for 2 minutes.
4.Add one ladleful of hot chicken stock to the rice mixture, and cook, stirring constantly, until the liquid is absorbed.
5.Continue to add the stock, one ladle at a time, stirring constantly until absorbed. This process should take around 20-25 minutes. The rice should be tender but still firm to the bite.
6.Mix in the chopped green beans and cheddar cheese until well combined. Remove from heat and let cool for 15 minutes.
7.Shape the mixture into 2-inch balls. Dip each ball into the beaten egg, then roll them in the crushed fried onions and breadcrumbs until coated.
8.Heat oil in a saucepan and fry the arancini balls until golden brown, around 2-3 minutes.
9.Remove with a slotted spoon and drain on paper towels. Serve hot.
