16 g dried morels , soaked , cut into 1/2 inch pieces
1 large garlic clove , minced
2 cups chicken stock
salt & freshly ground black pepper
3/4 lb asparagus spear , trimmed and peeled , see note
15 g freshly grated parmigiano-reggiano cheese

Instructions

1.Heat butter in a heavy-bottom skillet until melted and foamy. Add shallots and sauté until translucent.
2.Add morel mushrooms and sauté for 1-2 minutes.
3.Add garlic, sauté for 1 minute.
4.Add chicken stock, stir to combine, and bring to a boil.
5.Reduce heat, cover and simmer for 20 minutes.
6.While the sauce is cooking, prepare asparagus by trimming the woody ends and peeling.
7.Increase the heat to medium-high and add asparagus to the sauce. Season with salt and pepper.
8.Cook asparagus for 2-3 minutes until tender yet crisp.
9.Plate the asparagus and spoon the morel sauce over.
10.Garnish with freshly grated parmesan cheese.
