Ingredients

3 tablespoons water
2 1/2 teaspoons unflavored gelatin
1 cup fat-free half-and-half

1 cup low-fat buttermilk
6 ounces fat , free plain Greek yogurt
1 tablespoon grated orange rind
2 teaspoons vanilla extract
1/8 teaspoon salt
cooking spray ( Pam )
3 tablespoons sugar
1 tablespoon cornstarch
1 dash salt , to taste
1/8 teaspoon cardamom , spice
1 cup seedless watermelon puree
1/3 cup frozen raspberries or 1/3 cup fresh raspberry
1 tablespoon lemon juice

Instructions

1.In a small bowl, sprinkle gelatin over the water and stir until combined. Set aside for 5 minutes to let the gelatin soften.
2.In a medium saucepan, combine half-and-half and sugar. Cook over medium heat until the sugar dissolves, stirring frequently. Remove from heat once dissolved.
3.Add gelatin mixture to the saucepan and stir until dissolved. Whisk in buttermilk, yogurt, orange rind, vanilla, and salt, until combined.
4.Lightly coat 6-8 (1/2 cup) ramekins or custard cups with cooking spray. Pour mixture into the cups. Cover with plastic wrap and refrigerate for at least 4 hours or overnight, until firm.
5.Make the sauce: In a small saucepan, combine sugar, cornstarch, salt, cardamom, watermelon puree, raspberries, and lemon juice over medium heat. Cook until the mixture thickens, stirring frequently.
6.Remove saucepan from heat and let it cool for 10 minutes. Serve sauce over panna cotta.
