Ingredients

3 lbs leg of lamb , boned and cut into large cubes
1 1/2 tablespoons coarse sea salt
1/4 cup dried greek oregano
2 lemons , zest of
1/2 cup lemon juice
1/2 teaspoon ground red chili pepper
2 cups strained Greek yogurt
1/2 cup greek honey
4 garlic cloves , finely chopped
1/4 1/4 cup plain chicken stock or 1/4 cup light lamb stock

Instructions

1.Preheat your oven to 375°F.
2.Season cubed lamb with coarse salt and set aside for 30 minutes.
3.Mix together the dried Greek oregano, chili pepper, lemon zest, lemon juice, chopped garlic, honey and strained Greek yogurt in a bowl.
4.Using a heavy bottom pot, brown the lamb over medium-high heat in small batches. Keep the browned pieces aside.
5.In the same pot, add the stock and deglaze, scraping all the brown bits from the bottom of the pot. Add back the lamb and half of the yogurt mixture and bring to a simmer.
6.Cover the pot and carefully transfer it into the oven. Braise for 1 hour or until lamb is tender and has reached an internal temperature of 145°F.
7.Take the pot out of the oven and pour the remaining yogurt mixture over the lamb.
8.Serve hot with your favorite side dish.
