Ingredients

1/2 cup raisins
3 fluid ounces brandy

1/3 cup superfine sugar
1/4 cup honey
9 ounces all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
2 lemons , finely grated rind of
3 ounces unsalted butter , melted then cooled
400 ml Greek yogurt

Instructions

1.Preheat the oven to 350°F and grease a 9-inch cake pan.
2.In a small saucepan, combine the raisins, brandy, ouzo, lemon juice, and water over medium heat. Bring to a boil, then remove from heat and set aside.
3.In a large mixing bowl, beat the egg yolks with the sugar until smooth and creamy.
4.Stir in the honey, flour, baking powder, salt, and lemon rind.
5.Add the melted butter and Greek yogurt, mixing until just combined.
6.In a separate mixing bowl, beat the egg whites until stiff peaks form.
7.Fold the egg whites into the cake batter gently and pour into the prepared cake pan.
8.Bake for 40-45 minutes or until a toothpick inserted in the center comes out clean.
9.While the cake is baking, strain the raisin syrup through a fine-mesh sieve into a clean saucepan. Add in the superfine sugar and bring to a boil, stirring until the sugar dissolves. Reduce the heat and let simmer for 5-10 minutes until the syrup thickens. Remove from heat and allow to cool slightly.
10.Once the cake is done, remove from the oven and let cool for a few minutes. Using a skewer or fork, prick the top of the cake all over. Slowly drizzle the raisin syrup over the top of the cake, allowing it to soak in evenly. Serve warm or at room temperature.
