Ingredients

3 sun-dried tomatoes , snipped
1/2 cup boiling water
1 large Spanish onion , peeled and finely chopped
1 medium leek , washed & finely chopped ( white part and just a little green )
3 tablespoons olive oil
1 can diced tomatoes , with the juice ( petite diced )
1 teaspoon sugar
1 garlic clove , minced
1/2 orange , zest of ( grated )
2 tablespoons of fresh mint , finely chopped
4 1/2 cups herb broth ( Herb Broth )
1 1/2 cups Greek yogurt
1 tablespoon all-purpose flour
salt & freshly ground black pepper , to taste
1/2 cup flat leaf parsley , minced
Greek Tomato Soup, or Domatosoupa in Greek, is a simple and flavorful soup that is perfect for a light lunch or dinner. Made with sun-dried tomatoes, fresh herbs, and a base of canned tomatoes and broth, this soup is a quick and easy way to get a variety of veggies and nutrients into your diet. The addition of Greek yogurt makes it creamy and adds an extra boost of protein. Serve it with some crusty bread for a satisfying meal.

Instructions

1.In a small bowl, soak sun-dried tomatoes in boiling water for 10 minutes.
2.In a large pot, heat olive oil over medium heat. Add onion and leek. Cook until softened, about 10 minutes.
3.Add diced tomatoes with juice, sugar, minced garlic, orange zest, and chopped mint. Stir to combine.
4.Add herb broth and soaked sun-dried tomatoes and their soaking liquid. Bring to a simmer and cook for 20 minutes.
5.In a bowl, whisk Greek yogurt and flour until smooth. Slowly add a cup of soup while whisking to temper the yogurt. Pour the mixture back into the pot of soup and stir to combine.
6.Season with salt and pepper to taste.
7.Serve hot, garnished with minced parsley.

PROS
