Ingredients

8 cleaned squid ( about 1 1/4 lb , with 5 to 6 inch-long bodies , tentacles chopped )
2 teaspoons olive oil
1/2 cup finely chopped onion
1 cup cooked rice , preferably brown rice , prepared with a little salt
1/4 cup toasted pine nuts
2 tablespoons currants , soaked in water for 10 minutes and drained
1/4 cup finely chopped fresh flat-leaf parsley
salt , freshly ground black pepper to taste
1 teaspoon olive oil

1/2 cup dry white wine

Instructions

1.Preheat oven to 375°F.
2.Heat 2 tsp olive oil in a frying pan and sauté 1/2 cup finely chopped onion over medium heat until soft, about 5 minutes.
3.Stir in 1 cup of cooked rice, 1/4 cup toasted pine nuts, 2 tbsp of currants (soaked in water for 10 minutes and drained), and 1/4 cup of finely chopped parsley.
4.Season the mixture with salt and freshly ground black pepper.
5.Stuff the squid bodies with the mixture using toothpicks to keep them closed.
6.Heat 1 tsp olive oil in a frying pan, add 1/4 cup finely chopped onion and 1 tsp minced garlic, and cook over medium heat until soft and golden.
7.Add 1 can of diced tomatoes, 1/2 cup of dry white wine, 1 1/2 tsp fresh lemon juice, 1/4 tsp of salt, and 1/8 tsp fresh ground black pepper. Cook over medium heat for 5 minutes, stirring frequently.
8.Add the reserved tomato juice and bring the mixture to a boil.
9.Arrange the stuffed squid in an ovenproof dish, pour the tomato sauce over them, and bake for 30-40 minutes, or until the squid is tender and cooked through.
