12 large garlic cloves ( unpeeled )

1/2 cucumber , peeled , seeded , very thinly sliced
1/2 small red onion , very thinly sliced
2 tablespoons red wine vinegar

4 ounces cream cheese , room temperature
3 tablespoons black olives , cjopped
3 tablespoons green olives , chopped
4 pita bread rounds , 6-inch diameter ( cut horizontally in half )
8 tablespoons monterey jack cheese , grated
8 tablespoons cheddar cheese , grated
butter , room temperature
1 red bell pepper , cut into strips

Instructions

1.Preheat the oven to 450°F.

4.In another bowl, combine the roasted garlic (peeled and mashed), cream cheese, black olives, and green olives.

6.Top 4 of the pita bread halves (cheese side up) with the Monterey Jack cheese, cheddar cheese, and red bell pepper strips. Cover with the remaining pita bread halves (cheese side down).
7.Heat a non-stick griddle over medium heat.
8.Spread butter on each side of the quesadillas.
9.Place the quesadillas on the griddle and cook until golden brown and the cheese is melted, about 2-3 minutes per side.
10.Slice the quesadillas into halves or quarters and serve hot.
