Ingredients

1/2 cup olive oil
1/2 cup fresh lemon juice
1/4 cup grape juice
1/4 cup red wine vinegar
6 minced garlic cloves
salt and pepper
2 lbs boneless pork loin
1 onion , sliced
2 teaspoons dried Italian seasoning
1/2 teaspoon dried basil
2 bay leaves , crumpled ( optional but good to add )
2 tablespoons butter
1 1/2 cups rice
3 cups good quality chicken broth
1 lemon
salt and pepper
This Greek-Style Marinated Pork With Lemon Rice is a delicious and easy meal that's perfect for weeknight dinners or special occasions. Instructions

1.Combine olive oil, lemon juice, grape juice, red wine vinegar, 4 minced garlic cloves, salt, and pepper in a large resealable bag. Add pork, seal, and shake to coat. Marinate in the refrigerator for at least 2 hours, or overnight.
2.Preheat oven to 350 degrees F (175 degrees C).
3.Remove pork from marinade and place in a baking dish. Add onion, remaining garlic, Italian seasoning, basil, and bay leaves. Cut butter into small pieces and place on top of the pork and onions.
4.Cover with aluminum foil and bake in the preheated oven for 1 hour 30 minutes, or until the internal temperature of the pork has reached 145 degrees F (63 degrees C).
5.While the pork is baking, prepare the lemon rice. Combine rice, chicken broth, zest and juice of one lemon, salt, and pepper in a large saucepan. Bring to a boil, then reduce to low heat and cover with a lid. Cook for 18 minutes, or until the rice is tender and the liquid has been absorbed.
6.Serve the pork over the lemon rice, and enjoy!
