2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon salt

1 cup plain breadcrumbs
3/4 cup grated carrot
1/2 teaspoon baking powder
2 cups plain low-fat yogurt
1 medium cucumber , peeled , seeded , shredded and drained
2 garlic cloves , minced
1 teaspoon lemon zest
1 teaspoon of fresh mint , chopped
1 teaspoon fresh parsley , chopped

Instructions

1.Place the lentils in a pot and cover with water. Bring the water to a boil.
2.Reduce the heat to medium and let lentils cook for 20-25 minutes or until the lentils are tender.
3.Drain any excess water and set aside.
4.Heat the olive oil in a large pan over medium heat. Add the chopped onion and red bell pepper and saute 5-6 minutes, until onion is translucent.
5.Add the garlic, chickpeas, parsley, olives, cumin, coriander, salt, and pepper. Cook the mixture for 5-6 minutes, stirring occasionally.
6.Let the mixture cool for 5-10 minutes, then transfer it to a food processor and pulse until almost smooth.
7.Transfer the mixture to a large bowl and add the eggs, breadcrumbs, grated carrot, and baking powder. Mix until well combined.
8.Scoop the mixture and make 6 equal patties.
9.Heat a non-stick pan with olive oil over medium heat, and cook each patty for 3-4 minutes per side until golden brown. Turn the heat off and let the patties cool down.
10.Prepare the tzatziki sauce by mixing the yogurt, shredded cucumber, garlic, lemon zest, mint, and parsley. Stir until combined and put aside.
