Ingredients

6 boneless skinless chicken breasts
2 tablespoons vegetable oil
1/4 cup butter
1 large onion , chopped
1 can sliced mushrooms , drained
2 tablespoons parsley flakes
1 1/2 tablespoons finely chopped fresh dill
1 garlic clove , minced
1 package frozen chopped spinach , cooked & drained well
1 1/2 tablespoons all-purpose flour
1/3 cup vermouth or 1/3 cup dry white wine
1 cup ricotta cheese
1/2 cup feta cheese
salt & pepper
1/2 cup melted butter
12 sheets phyllo dough
dry breadcrumbs

Instructions

1.Preheat oven to 375°F.
2.In a large skillet, saute onions in 2 tablespoons of oil over medium heat until translucent.
3.Add mushrooms and garlic and cook until mushrooms release all of their liquid.
4.Sprinkle flour over the mixture and stir to combine.
5.Add vermouth (or white wine), stirring constantly until sauce thickens.
6.Add cooked spinach, ricotta cheese, feta cheese, parsley, dill, salt, and pepper, stirring well to combine all ingredients.
7.Remove from heat and let cool to room temperature.
8.Trim any fat from the chicken breasts and season with salt and pepper on both sides.
9.In a skillet, heat 1/4 cup of butter and 2 tablespoons of oil over medium-high heat.
10.Fry chicken breasts until lightly browned on both sides.
11.Remove chicken from skillet and let cool to room temperature.
12.Take 2 sheets of phyllo dough and brush with melted butter.
13.Sprinkle with dry breadcrumbs.
14.Place a chicken breast on top, then spoon some of the spinach-cheese mixture over the chicken.
15.Fold dough around chicken and fold under the ends.
16.Place on a greased baking sheet, seam side down.
17.Repeat until all chicken breasts are wrapped.
18.Brush melted butter over the top of each chicken breast.
19.Bake for 45 minutes to 1 hour, or until golden brown and crispy.
