Ingredients

24 medium sized green zucchini
1 large onion , finely chopped
2 tablespoons olive oil
2 lbs ground beef lamb
1/3 cup white basmati rice
1 tablespoon tomato paste
4 tablespoons chopped parsley
1 teaspoon chopped of fresh mint ( do n't omit , you may use dry mint if fresh is not available )
1/8 teaspoon ground cinnamon
1 teaspoon bahrat mixed spice ( Baharat Aka Middle East Mixed Spices - the Real Mix )
fresh ground black pepper
salt
2 cups chicken stock
1 1/2 tablespoons rice flour ( to be gluten free )
2 eggs , separated ( does not work with egg replacer )
1 lemon , juice of

Instructions

1.Preheat oven to 400°F (200°C).

4.Add the ground beef lamb, tomato paste, rice, parsley, mint, cinnamon, bahrat mixed spice, black pepper, and salt. Cook for 10-15 minutes until the meat is browned and the rice is cooked.
5.Stuff the zucchini halves with the meat mixture.
6.In a separate bowl, whisk the chicken stock, rice flour, egg yolk, and lemon juice.
7.Pour the mixture into an oven-safe dish and place the stuffed zucchini halves on top.
8.Bake for 50 minutes to 1 hour until the zucchini is tender and the tops are golden brown.
