Ingredients

4 chicken breasts
6 ounces feta

8 medium tomatoes
1 cup couscous
2 cups chicken broth
1 diced red onion
2 crushed garlic cloves
1 diced tomato
1 mushroom , diced

Instructions

1.Preheat the oven to 375°F.
2.In a bowl mix together feta, Greek yogurt, lemon juice and dill. Add salt and pepper to taste.
3.Cut a horizontal pocket into each chicken breasts and fill each pocket with the feta mixture. Use toothpicks to secure the pocket closed.
4.Halve the tops of the tomatoes and scoop out the seeds with a spoon. Set aside.
5.In a large bowl, combine the couscous, chicken broth, red onion, garlic, and diced tomato. Stir well and let sit for 5 minutes until the couscous has absorbed the broth.
6.Stuff the tomato halves with the couscous mixture and place them in a baking dish.
7.Place the stuffed chicken breasts on top of the tomatoes and mushrooms.
8.Bake for 40-45 minutes, until the chicken is golden brown and the tomatoes are tender and juicy.
