Ingredients

2 2 lbs squash or 2 lbs zucchini , grated
1 medium red onion , minced
2 spring onions , minced
1/2 cup olive oil
1/2 cup dry breadcrumbs
1/2 lb feta cheese , crumbled
4 eggs
1/2 cup milk
1 lb phyllo pastry ( or filo )
2 tablespoons parsley , minced
2 tablespoons fresh dill , minced
4 ounces butter , melted ( approximately )
Greek Squash Pita (Savoury) is a traditional Greek dish that makes for a healthy and delicious lunch option. This recipe combines grated squash, feta cheese, and a variety of herbs and spices, wrapped in layers of flaky phyllo pastry. This dish is a great way to incorporate a variety of fresh vegetables and herbs into your diet while also enjoying a unique and flavourful meal. Instructions

1.In a large mixing bowl, combine the grated squash, red onion, spring onions, olive oil, breadcrumbs, feta cheese, eggs, milk, parsley, and dill.
2.Preheat the oven to 375°F (190°C).
3.Grease a 9x13 inch baking pan with the melted butter.
4.Layer 8 sheets of phyllo pastry in the bottom of the pan, brushing each sheet with melted butter.
5.Pour the squash mixture on top of the phyllo pastry, spreading it out evenly.
6.Top the squash mixture with another 8 layers of phyllo pastry, once again brushing each sheet with melted butter.
7.Bake the pita in the oven for 40-45 minutes, or until the top is golden brown.
8.Remove the pita from the oven and let it cool for 5-10 minutes before cutting it into squares and serving.
