2 lbs fresh spinach ( frozen would work )
1 cup chopped scallion
2 teaspoons olive oil
2 cups cooked brown rice
2 teaspoons dried dill
1 1/2 teaspoons lemon juice
salt and pepper
1 cup plain breadcrumbs ( I bet wheat germ would be good too )

Instructions

1.Preheat oven to 350F
2.Blanch spinach and chop
3.Sauté scallion in olive oil
4.Add spinach, rice, dill, lemon juice, salt and pepper, combine well
5.Make balls (approx. 2 inches) and roll them in breadcrumbs
6.Place them on a baking sheet
7.Bake for 20-25 minutes, flipping halfway, until golden brown
