Ingredients

1 lb elbow macaroni
1 teaspoon salt
3/4 lb medium shrimp , peeled and deveined
1 3/4 cups low-fat milk
3/4 cup Hidden Valley & reg ; Original Ranch & reg ; Dressing
1 cup low fat Greek yogurt
1/2 lemon , zest of
2 teaspoons dried oregano
1 teaspoon nutmeg
2 cups shredded parmesan cheese

2 cups fresh spinach leaves
2 ounces crumbled feta cheese
Greek Shrimp Mac and Cheese is an exciting twist to the traditional mac and cheese dish. This recipe adds a subtle Mediterranean twist, with Greek yogurt, oregano, and feta cheese. Instructions

1.Bring a large pot of salted water to a boil. Cook the macaroni for 8-10 minutes or until al dente, drain and set aside.
2.In a large skillet, cook the shrimp for 2-3 minutes on each side until pink. Remove and set aside.
3.In a medium saucepan, heat the milk until it boils. Reduce heat and add the Hidden Valley® Original Ranch® Dressing, Greek yogurt, lemon zest, nutmeg, oregano, salt, and black pepper. Whisk for 1-2 minutes until well combined.
4.Add in the cooked macaroni, spinach, and 1 cup of shredded parmesan cheese. Stir well till the cheese melts and everything is well combined.
5.Add the cooked shrimp and toss gently to combine.
