Ingredients

1/4 cup lemon juice , fresh
3 tablespoons water
1 teaspoon olive oil
1/2 teaspoon dried oregano
1/2 teaspoon all purpose Greek seasoning
1/4 teaspoon pepper
2 garlic cloves , crushed
4 skinless chicken breast halves
cooking spray
3 cups orzo pasta , cooked and hot ( about 1 cup uncooked rice-shaped pasta )
1/4 cup black olives , sliced
1 1/2 tablespoons fresh chives , chopped
1 tablespoon reduced-calorie stick margarine , melted
3/4 teaspoon all purpose Greek seasoning
oregano sprig ( optional )
This Greek Seasoned Chicken and Orzo dish is a delicious Mediterranean-inspired meal that is sure to impress. Instructions

1.In a small bowl, combine the lemon juice, water, olive oil, oregano, Greek seasoning, pepper, and garlic. Stir well.
2.Place the chicken in a large ziploc bag. Pour the marinade over the chicken and seal the bag. Marinate in the refrigerator for at least 2 hours or overnight.
3.Preheat the oven to 400 degrees F, and coat a large baking dish with cooking spray. Remove the chicken from the marinade and place in the baking dish. Discard the remaining marinade.
4.Bake for 25-30 minutes or until the chicken is cooked through.
5.In a large bowl, combine the hot orzo, black olives, chives, melted margarine, and Greek seasoning. Toss well to combine.
6.Serve the chicken and orzo together, garnished with an oregano sprig if desired.
