Ingredients

2 yellow peppers
1 small fennel bulb
2 eggs , cooked , peeled and sliced into wedges
4 tomatoes ( vine-ripened are best )
1 head soft lettuce , torn into bite-sized pieces ( not iceberg )
1 can anchovies in oil , drained
2 shallots , finely chopped
basil leaves , to serve
3 tablespoons small black olives
75 g feta , drained
100 ml olive oil
3 -5 sprigs fresh oregano , leaves finely chopped
1 lemon , juiced
2 tablespoons sherry wine vinegar or 2 tablespoons balsamic vinegar
salt & freshly ground black pepper , to taste

Instructions

1.Preheat the oven to 220°C/ 200°C fan/ gas mark 7. Line a baking tray with parchment paper.
2.Place the yellow peppers, fennel bulb, and tomatoes on the baking tray and drizzle with 2 tablespoons of olive oil. Roast for 20 minutes.
3.In a large bowl, mix together the lettuce, cooked eggs, anchovies, shallots, olives, and feta.
4.For the dressing, whisk together the remaining olive oil, lemon juice, vinegar, oregano, salt, and pepper in a separate bowl.
5.Add the roasted vegetables to the salad and toss with the dressing.
6.Serve immediately, topped with fresh basil leaves.
