Ingredients

1/2 cup short grain white rice ( a starchy rice , like arborio )
3 cups whole milk
peel of 1 lemon , removed in one long strip
1/3 cup white sugar , plus
2 tablespoons white sugar
2 egg yolks , slightly beaten
1 1/2 teaspoons cornflour ( cornstarch is the same thing )
1/2 teaspoon vanilla extract ( optional )

Instructions

1.Rinse rice in a mesh strainer and set aside.
2.In a medium saucepan, combine milk, lemon peel, and 1/3 cup sugar and heat over medium-high heat until it reaches a simmer.
3.Add the rice and stir to combine. Reduce heat to low and let simmer for 18-20 minutes, stirring occasionally, until the rice is tender.
4.In a separate bowl, whisk together the egg yolks, cornflour, remaining 2 tablespoons of sugar, and vanilla extract.
5.Once the rice is tender, remove the lemon peel and pour a ladleful of the hot rice mixture into the bowl with the egg mixture, whisking constantly.
6.Pour the egg mixture back into the saucepan with the rest of the rice, whisking constantly over low heat, until it thickens.
7.Once thickened, remove from heat and divide the pudding evenly between 4-6 serving dishes.
8.Place in the fridge to cool and serve cold.
