This Greek Pizza with Phyllo Crust is a unique twist on traditional pizza. The combination of spinach, garlic, and feta cheese creates a flavor profile that is sure to impress. Phyllo dough, a paper-thin pastry popular in Mediterranean cuisine, serves as the base for this pizza. This recipe takes about an hour from start to finish, making it a great option for a weekend dinner party or family meal. It is best served hot and fresh out of the oven, but leftovers can be reheated in the oven for a crispy bite.

Instructions

.Preheat the oven to 400°F.
.Heat the olive oil in a large skillet over medium heat. Add the onions, salt, basil and oregano, and cook until the onions are soft and translucent, about 8 to 10 minutes.
.Add the minced spinach, garlic and pepper to the pan, and stir until the spinach is wilted, about 2 to 3 minutes. Turn off the heat and mix in the lemon juice.
.Unwrap the phyllo dough and cover it with a damp kitchen towel while you work.
.Take an 18 x 13 inch sheet of phyllo dough and place it on a large baking sheet. Mist lightly with cooking spray. Repeat with 7 more layers of phyllo, misting each layer with cooking spray.
.Spread the spinach mixture over the phyllo, leaving a 1-inch border around the edges.
.Sprinkle the mozzarella cheese over the spinach mixture, followed by the tomato slices and kalamata olives. Finally, sprinkle the feta cheese over the top.
.Fold the phyllo edges over the filling to create a border around the pizza.
.Mist the edges of the phyllo with cooking spray and bake for 25 to 30 minutes, or until the phyllo is golden brown and crispy. Let cool for 5 minutes before slicing and serving.
