2 pita breads , cut in half
1/4 cup feta cheese spread ( tyrokafteri )
1/2 cup shredded cooked lamb
12 kalamata olives , pitted
2 thin slices red onions , separated into rings
assorted cooked vegetables ( optional )

Instructions

1.Preheat your oven to 375F or 190C.
2.Lay the 4 pita breads flat on a baking sheet. Spread a tablespoon of feta cheese spread ( tyrokafteri ) on each of the pita bread.
3.Top each pita bread with a bit of the shredded lamb and kalamata olives.
4.Add a few slices of red onion which have been separated into rings.
5.Add the optional vegetables, if desired. You can use cooked or roasted vegetables here. Feel free to use whatever vegetables you have on hand.
6.Drizzle tzatziki sauce over the top of each pita.
7.Bake the pitas in the preheated oven until heated through and just starting to crisp, about 8-10 minutes. Serve immediately.
