9 small zucchini
1 1/2 cups chopped onions
2 cups chopped celery
1/4 cup olive oil
1/2 cup brown rice
1 cup boiling water
1/2 cup breadcrumbs
1 cup chopped parsley
3 eggs , separated
3 lemons

Instructions

1.1.Preheat oven to 375°F.
2.2.Wash zucchinis and cut off the top.
3.3.Using a sharp scoop or knife, scoop out most of the flesh from zucchinis, being careful not to break the skin.
4.4.Chop the zucchini flesh and set aside, remove and discard the seeds.
5.5.In a small saucepan, bring the brown rice and 1 cup of boiling water to a boil, stir, put the lid on, reduce the heat, and let simmer for 20-25 minutes.
6.6.Meanwhile, in a large skillet, heat the olive oil and sauté the onions, and celery until they are soft and translucent.
7.7.Add the chopped zucchini flesh and stir for a minute.
8.8.Remove from heat and add the cooked rice, breadcrumbs, parsley, 3 egg yolks, lemon zest, lemon juice, salt, and pepper to the skillet.
9.9.Whisk the 3 egg whites until fluffy and fold in the egg-yolk mixture.
10.Stuff the mixture generously into the hollowed-out zucchinis.
11.11.Place the stuffed zucchinis in a baking dish lined with parchment paper.
12.12.Bake for 45 minutes, or until golden brown. Serve with a sprinkle of parsley on top.
