Instructions

1.Preheat your oven to 350°F.
2.Peel your orange and remove the pith. Cut it into thin, 1-inch pieces.

6.Whisk together the egg beaters, vanilla extract, cinnamon, and remaining tablespoons of honey. Stir in the milk mixture until well combined.
7.Pour the egg mixture over the pita mixture in the baking dish. Top with sliced almonds and remaining 2 tablespoons of currants.
8.Bake for 35 minutes or until the center is set and the edges are golden.
