Instructions

1.Preheat the oven to 375°F.
2.In a large skillet, heat the olive oil over medium heat.
3.Add the red onion, leek, shallots, and green onions and sauté until tender, about 5 minutes.
4.Squeeze the excess liquid from the spinach and add it to the skillet, cooking for an additional 3 minutes.
5.Remove the skillet from the heat and add the feta cheese, ricotta cheese, beaten eggs, salt, and pepper. Mix until well combined.
6.Spray a 9x13-inch baking dish with olive oil cooking spray.
7.Layer 5 sheets of phyllo dough in the baking dish, spraying each sheet with cooking spray. Add the spinach mixture to the baking dish and spread into an even layer. Top with the remaining phyllo sheets, spraying each sheet with cooking spray. Trim any overhanging pastry from the edges of the dish.
8.Bake for 40-45 minutes, until golden brown and crispy.
