Ingredients

1 cup softened unsalted butter
1 1/2 cups light vegetable oil
1/2 cup confectioners ' sugar
2 large oranges , juice of ( strained )
2 tablespoons vanilla
1 teaspoon cinnamon
1/4 teaspoon ground cloves
1/2 teaspoon nutmeg
1 teaspoon baking powder
1/2 teaspoon baking soda
6 cups all-purpose flour ( do not use self-rising , it has salt )
3/4 cup very finely chopped english walnuts
1 teaspoon cinnamon , mixed with the nuts
1 1/2 cups honey
1 1/2 cups granulated sugar
1 cup water
1 tablespoon lemon juice

Instructions

1.In a large mixing bowl, cream the butter and vegetable oil together until light and fluffy.
2.Add the confectioners’ sugar and mix until well combined.
3.Add the orange juice, vanilla, cinnamon, ground cloves, nutmeg and mix again.
4.In a separate bowl, mix together the baking powder, baking soda and flour.
5.Slowly add the dry ingredients to the wet ingredients, mixing until just combined.
6.Fold in the chopped walnuts.
7.Preheat the oven to 350°F (180°C).
8.Make small balls of the dough (about 1 1/2 tablespoons each) and place them on a lined baking sheet, flattening them lightly.
9.Bake in the preheated oven for 20-25 minutes, or until golden brown.
10.While the cookies are baking, mix together the honey, sugar, water, and lemon juice in a saucepan.
11.Heat the mixture over medium heat until the sugar dissolves, then simmer for a further 5-10 minutes.
12.Remove the cookies from the oven and immediately transfer them to the warm honey syrup.
13.Let the cookies soak for 30 seconds, then remove them using a slotted spoon and transfer them to a wire rack to cool completely.
