Ingredients

4 medium potatoes , peeled and quartered
4 boneless skinless chicken breast halves
1/4 cup lemon juice
3 garlic cloves , minced
1/2 cup fat free chicken broth
1 tablespoon fresh oregano , chopped

1/2 teaspoon coarse sea salt ( can use regular salt )
1/2 teaspoon celery salt ( can use regular salt )
1/2 teaspoon fresh coarse ground black pepper ( or to taste )
1/2 teaspoon onion powder
1/2 cup fresh green beans
1/2 cup baby carrots , peeled

Instructions

1.Rinse and peel the potatoes, cut them into quarters. Cut the ends of the green beans. Peel the baby carrots.
2.Wash the chicken breasts and pat them dry. Layer the potatoes, chicken and vegetables into the crock pot.
3.In a bowl, whisk together the lemon juice, garlic, chicken broth, oregano, basil, salt, celery salt, black pepper, and onion powder.
4.Pour the mixture over the chicken and vegetables.
5.Cook on low for 6-8 hours or high for 3-4 hours until chicken is tender and potatoes are cooked.
