Ingredients

1 cup sliced almonds
1 cup semolina
5 cups water
1 cup sugar
1/2 teaspoon masticha
1 teaspoon sugar
oil , to coat a pudding mould

Instructions

1.Toast the sliced almonds in a dry pan over medium heat until lightly golden, then set aside to cool.
2.In the same pan, toast the semolina until fragrant and lightly golden, then set aside to cool.
3.In a large saucepan, combine the water and sugar and heat over medium-high heat until the sugar is dissolved.
4.Add the masticha and stir well.
5.Slowly pour the toasted semolina into the syrup, stirring constantly to prevent lumps from forming.
6.Reduce the heat to low and stir constantly until the mixture thickens and pulls away from the sides of the pan.
7.Remove the pan from heat and add the toasted almonds, stirring well to combine.
8.Grease a pudding mould with oil and pour the halva mixture into the mould.
9.Smooth the surface with a spatula and let the halva cool to room temperature.
10.Once cool, flip the mould over onto a serving platter to remove the halva.
11.Lightly dust the top of the halva with a teaspoon of sugar before serving.
