Greek gyro meat is a popular dish that can be found in tavernas and restaurants worldwide. The meat is typically served in a warm, soft pita bread and topped with a range of toppings, like red onion, tomato, lettuce, and tzatziki sauce. The origins of the recipe are found in Greece, where they prepare the meat on a large skewer and cook it slowly over a charcoal grill. However, this recipe allows you to prepare delicious gyro meat in your own kitchen using either a grill, rotisserie, or oven. Serve the meat with your favorite toppings for a taste of Greece in your own home.

Instructions

.In a large bowl, mix the finely chopped onion, minced garlic, dried marjoram, ground rosemary, kosher salt, and freshly ground black pepper.
.Add in the finely ground lamb (or hamburger) and mix everything together until well combined.
.Mold the mixture into a loaf shape, then wrap it tightly with cling film.
.Place the wrapped mixture in the fridge for at least an hour to firm up.
.Preheat your oven, grill or rotisserie to a medium-high heat.
.Unwrap the meat, then place it on your desired cooking surface; if using a rotisserie, secure the meat in place with prongs or a rotisserie basket.
.Cook the meat for around 2 hours or until cooked through, rotating the meat mid-cook if using a rotisserie.
.Remove from heat and leave to rest for at least 10 minutes before slicing and serving.
