Ingredients

1 cup barley
salt
1/2 cup rye berries
1/2 cup wheat berries
1/2 cup pitted halved kalamata olive
1/2 cup crumbled feta cheese
1/2 cup diced cucumber
1/2 cup diced tomato
1/4 cup diced red onion
1/4 cup chopped fresh parsley leaves
1/4 cup chopped dill
3 tablespoons cider vinegar
2 tablespoons minced dill
2 garlic cloves , minced
1/4 cup olive oil

Instructions

1.Rinse barley under cold water. Bring a pot of salted water to boil over high heat. Add barley and cook until tender, about 20 to 25 minutes. Drain and rinse under cold water.
2.Rinse rye berries and wheat berries under cold water. Bring another pot of salted water to boil over high heat. Add rye berries and cook until tender, about 35 to 40 minutes. Drain and rinse under cold water, and repeat with the wheat berries.
3.In a large mixing bowl, combine cooked barley, rye berries, and wheat berries.
4.Add kalamata olives, crumbled feta cheese, diced cucumber, diced tomato, diced red onion, chopped parsley, chopped dill.
5.In another bowl, whisk together minced garlic, cider vinegar, olive oil, salt and pepper. Pour dressing over salad and toss to mix well.
6.Serve cold and enjoy!
