Ingredients

5 -6 cups unbleached all-purpose flour
2 packages active dry yeast
1 cup sugar
1 teaspoon grated lemon , zest of
1 teaspoon freshly ground cardamom
1 teaspoon salt
1 cup milk
3/4 cup unsalted butter , cut into pieces
3 large eggs , beaten
1 large egg , beaten with
1 tablespoon milk
1 -6 colored uncooked egg ( see Easter Bread Rings , below )
sliced blanched almond , for sprinkling ( optional )
sesame seeds , for sprinkling ( optional )
Greek Easter Bread Lambrokouloures, also known as Tsoureki or brioche, is a traditional sweet bread that is commonly eaten during the Orthodox Easter celebration. It is a special treat that brings families and friends together to enjoy. The bread’s golden color signifies the warmth of the sun and the red eggs, placed in the twist of the bread, symbolize the blood of Christ and Resurrection. Instructions

1.In a large mixing bowl, combine 3 cups flour, yeast, sugar, lemon zest, cardamom, and salt.
2.In a saucepan, heat milk and butter until warm, then add to the mixing bowl.
3.Add beaten eggs and beat with an electric mixer at low speed for 1 minute.
4.Gradually add enough remaining flour to form a soft dough. Knead the dough on a floured surface until smooth and elastic.
5.Place the dough in a greased bowl, cover, and let it rise until double in size.
6.Punch dough down, divide it into equal portions, and roll each into a 10-inch rope.
7.Shape each rope into a figure-eight and twist the ends to seal. Tuck a red egg into each twist and let rise in a greased baking sheet.
8.Preheat the oven to 375°F and brush with the egg mixture and sprinkle with almonds and sesame seeds.
9.Bake for 25-30 minutes or until golden brown.
10.Serve and enjoy!
