Ingredients

1/4 cup chopped onion

1 egg , slightly beaten
0.5 package chopped spinach
2/3 cup crumbled feta cheese
1/3 cup melted butter
10 sheets phyllo dough
This Greek Croustade recipe originated in the book, Better Homes and Gardens in 1983. It is a spin-off of traditional Greek spinach and feta pies, but with the added twist of a flaky phyllo crust. The dish is a combination of spinach, feta cheese, and a creamy sauce that is poured into the phyllo dough crust. The pie is then baked until the phyllo crust is golden brown and flaky. This dish is a perfect option for a healthy meal or a lighter option for dinner parties or potlucks.

Instructions

1.Preheat oven to 375 degrees F. In a small skillet, cook onion in the 2 tablespoons butter until tender but not brown. Stir in flour, tarragon, and black pepper until well blended. Add milk all at once. Cook and stir until mixture is thickened and bubbly. Cook and stir for 1 minute more. Remove from heat. Gradually stir about half of the hot mixture into the beaten egg. Return all to saucepan. Stir in chopped spinach and feta cheese.
2.Brush an 8-inch pie plate with some of the melted butter. Unfold the phyllo dough, remove the sheets as needed, and keep the remaining dough covered to prevent drying. Brush each sheet of dough with melted butter as it is added to the pan. Use up 10 sheets of dough, allowing each sheet to extend over the edge of the pan
3.Spoon spinach mixture into phyllo shell. Fold phyllo edges over spinach mixture, pleating as necessary to fit.
4.Bake in the preheated oven for 30 to 35 minutes or until crust is golden brown. Serve immediately.
