Ingredients

1 1/2 cups vegetable stock or 1 1/2 cups chicken stock
1 cup couscous
1/2 cup minced red bell pepper
1/3 cup minced green onion
1/3 cup minced red onion
1/4 cup minced black olive
1 teaspoon minced garlic
1 teaspoon dried oregano
1 1/2 ounces reduced-fat feta cheese , crumbled
2 large egg whites
1 large egg
2 tablespoons fresh lemon juice
1/2 cup low-fat sour cream
2 teaspoons chopped fresh dill
1 teaspoon fresh lemon juice
1/4 teaspoon minced garlic
Couscous belongs to the Berber culture that spans across North Africa and the Middle East. The Mediterranean cuisine has adopted couscous and made it a staple ingredient in their diet. Couscous comes in the form of tiny balls of wheat or semolina which can be easily cooked. Couscous is versatile and can be paired with many things. In this recipe, the cooked couscous is mixed with a combination of veggies, egg, feta cheese, and egg whites, and then formed into cakes. These are then baked to perfection and served with a zesty dip made from low-fat sour cream, garlic, dill, and lemon juice. It’s a great recipe that combines texture, flavors, and aromas that will take you straight to the Mediterranean.

Instructions

1.Preheat the oven to 400°F.
2.Bring the vegetable or chicken stock to a boil in a saucepan. Put the couscous in a bowl and pour the boiling stock into the bowl. Cover it and let it stand for 10 minutes.
3.In a large mixing bowl, combine the cooked couscous and the minced red pepper, green onion, red onion, black olive, garlic, oregano, egg whites, egg, lemon juice, and feta cheese.
4.Spray a non-stick baking sheet or 12 cupcake molds with cooking spray. Divide the mixture evenly and use a small spoon or a scoop to spoon the mixture into the molds or onto the sheet.
5.Bake for 20 minutes or until golden brown. Allow cooling for 5 minutes.
6.Meanwhile, mix together sour cream, garlic, dill, and 1 tsp lemon juice in a serving bowl. Serve the cooked cakes with this creamy dip.
