Ingredients

1 tablespoon olive oil
1 whole chickens , cut into serving pieces
1 small yellow onion , chopped
3 garlic cloves , minced
1 cup long grain brown rice
1 3/4 cups chicken stock or 1 3/4 cups chicken broth
1/4 cup fresh lemon juice
1 teaspoon dried oregano
1/2 teaspoon salt
fresh ground pepper
1/2 cup pitted kalamata olives or 1/2 cup ripe black olives
1/4 cup crumbled feta cheese , for topping

Instructions

7.Reduce heat to low and cover the skillet, letting it simmer for 45-50 minutes or until the rice is tender and the chicken is cooked through.
8.Add olives to the skillet and stir until heated through.
9.Top with crumbled feta cheese, and serve hot.
